From a food truck to a farm-to-table destination. This is the story of how obsession with quality became a whole restaurant.
In 2019, Diego Castillo parked a food truck on the corner of Pecan Blvd in McAllen, Texas with one goal: serve the best farm-to-table food the Rio Grande Valley had ever tasted. No shortcuts, no frozen anything, no compromise.
The lines got long. Word spread. People drove from Brownsville, Harlingen, even San Antonio. Not for the Instagram — for the food. Diego's obsession with sourcing the best local ingredients and cooking everything from scratch built a following that couldn't be ignored.
By 2022, the truck became a restaurant. The same passion, the same quality, just more room to cook. Today, Diego's Farm to Table is a full-service restaurant with an open kitchen, a farm store, community events, and a membership club — all rooted in that original promise: farm fresh, no BS.

We work with farms within 100 miles. If we can't source it locally, we don't serve it. Period.
Every sauce, every dough, every cure. We make it in-house. No shortcuts, no pre-made anything.
Scraps become stock. Overripe fruit becomes sauce. We respect the food and the farmers who grow it.

Born and raised in the Valley, Diego grew up cooking with his grandmother — learning that the best meals come from the best ingredients, patience, and love. After working kitchens from Austin to Mexico City, he came home with one mission: bring world-class farm-to-table dining to McAllen.
Diego still sources produce himself, still visits the farms, and still comes out to your table to ask how everything was. That's not marketing — that's just who he is.
